Graham Cracker Crust Apple Pie

A creamy-crisp cross between apple pie and cheesecake pie — easy to make and great for holidays or fall dinners.

Ingredients

Graham Cracker Crust

  • 1 ½ cups graham cracker crumbs

  • ⅓ cup melted butter

  • ¼ cup brown sugar

  • Pinch of cinnamon

Apple Filling

  • 5–6 apples, peeled and thinly sliced (Honeycrisp, Granny Smith, or Fuji work well)

  • ⅓ cup brown sugar

  • ¼ cup white sugar

  • 1 tsp cinnamon

  • ¼ tsp nutmeg

  • 1 tbsp lemon juice

  • 2 tbsp flour or cornstarch

  • 1 tsp vanilla

Optional Crumb Topping

  • ½ cup flour

  • ⅓ cup brown sugar

  • ¼ cup cold butter

  • ½ tsp cinnamon

Directions

1. Make the Crust

  1. Preheat oven to 350°F.

  2. Mix graham cracker crumbs, melted butter, brown sugar, and cinnamon.

  3. Press into a 9-inch pie dish.

  4. Bake for 8 minutes, then cool slightly.

2. Prepare the Apples

  1. Toss sliced apples with:

    • brown sugar

    • white sugar

    • cinnamon

    • nutmeg

    • lemon juice

    • flour/cornstarch

    • vanilla

  2. Let sit 10 minutes.

3. Make Crumb Topping (Optional)

Mix flour, brown sugar, butter, and cinnamon with a fork until crumbly.

4. Assemble & Bake

  1. Fill crust with apples.

  2. Add crumb topping if using.

  3. Bake at 350°F for 45–55 minutes until apples are tender and filling bubbles.

If crust edges brown too quickly, lightly cover with foil.

Serve With

  • Vanilla ice cream

  • Fresh whipped cream

  • Caramel drizzle

Easy Upgrade Ideas

  • Add chopped pecans to the topping

  • Mix in a little salted caramel

  • Use cinnamon graham crackers for extra flavor

  • Add cheddar cheese crumble for a sweet-savory version

For a firmer “apple pie cheesecake” texture, you can also spread an 8 oz layer of sweetened cream cheese on the crust before adding apples.
