Graham Cracker Crust Apple Pie

A creamy-crisp cross between apple pie and cheesecake pie — easy to make and great for holidays or fall dinners.
Ingredients
Graham Cracker Crust
1 ½ cups graham cracker crumbs
⅓ cup melted butter
¼ cup brown sugar
Pinch of cinnamon
Apple Filling
5–6 apples, peeled and thinly sliced (Honeycrisp, Granny Smith, or Fuji work well)
⅓ cup brown sugar
¼ cup white sugar
1 tsp cinnamon
¼ tsp nutmeg
1 tbsp lemon juice
2 tbsp flour or cornstarch
1 tsp vanilla
Optional Crumb Topping
½ cup flour
⅓ cup brown sugar
¼ cup cold butter
½ tsp cinnamon
Directions
1. Make the Crust
Preheat oven to 350°F.
Mix graham cracker crumbs, melted butter, brown sugar, and cinnamon.
Press into a 9-inch pie dish.
Bake for 8 minutes, then cool slightly.
2. Prepare the Apples
Toss sliced apples with:
brown sugar
white sugar
cinnamon
nutmeg
lemon juice
flour/cornstarch
vanilla
Let sit 10 minutes.
3. Make Crumb Topping (Optional)
Mix flour, brown sugar, butter, and cinnamon with a fork until crumbly.
4. Assemble & Bake
Fill crust with apples.
Add crumb topping if using.
Bake at 350°F for 45–55 minutes until apples are tender and filling bubbles.
If crust edges brown too quickly, lightly cover with foil.
Serve With

Add chopped pecans to the topping
Mix in a little salted caramel
Use cinnamon graham crackers for extra flavor
Add cheddar cheese crumble for a sweet-savory version
For a firmer “apple pie cheesecake” texture, you can also spread an 8 oz layer of sweetened cream cheese on the crust before adding apples.
