Mint Chocolate Chip Ice Cream

For a Cuisinart Ice Cream Maker
Yield: About 1½ quarts
Ingredients
2 cups heavy cream
2 cups 2% milk
¾ cup packed light brown sugar (or ¾ cup granulated sugar)
1–1½ teaspoons mint extract (start with 1 teaspoon and taste)
1 teaspoon vanilla extract
¼ teaspoon salt
¾–1 cup mini chocolate chips
Instructions
Whisk together the sugar and salt.
Add the milk and whisk until the sugar dissolves.
Stir in the heavy cream, mint extract, and vanilla.
Cover and refrigerate for 2–4 hours, or overnight.
Pour into your frozen Cuisinart freezer bowl and churn for 20–25 minutes.
During the last 2–3 minutes, slowly add the mini chocolate chips.
Transfer to an airtight container and freeze for 2–4 hours to firm up before serving.
Optional: Make It Green
If you want the classic mint ice cream look, add 2–4 drops of green food coloring to the ice cream base before churning. It won’t affect the flavor.
